Recipe: Quinoa & Chickpea Soup

Quinoa & Chickpea Soup
makes 8 servings

Ingredients:
celery, 4-6 ribs
carrots, 4-6 medium
chicken or veggie broth, 4 cups
water, 3 cups
chickpeas, 4 15oz cans (drained)
diced tomatoes, 15oz can
dried minced onion, 1 Tbsp

Mrs. Dash Italian seasoning, 3 Tbsp
garlic powder, 1 tsp
salt, 2 tsp
quinoa, 1 cup

Directions:
[1] Chop celery & carrots into small, bite-size pieces.
[2] In large pot over high heat, add broth, water, celery, carrots, chickpeas, tomatoes, onion, Mrs. Dash, garlic powder, and salt. Bring to a boil, reduce heat, and let simmer for 30-40 minutes.
[3] Add quinoa, and let simmer for 20 more minutes.
[4] Soup's on! Time to eat!! :)

Nutrition Info (per serving): 322 calories, 4.75g fat (0g saturated), 14.5g fiber, 15.5g protein ... Cost Per Serving (at my store, anyway): $0.99
